Synthesis and characterization of new nanoparticles formed by milk whey proteins submitted to a thermal gelation process

In this work, nanostructures formed by the two whey proteins (alpha-lactoalbumin and beta-lactoglobulin) were synthesized througha thermal gelation process. The obtained proteic nanoparticles were characterized by using dynamic light scattering, transmission electron microscopy and atomic force microscopy.
